Bun Waffle Breakfast Sandwich

Ingredients

• 4 thin slices of HTB Easter Bran Bun
• 4 tablespoons softened Butter
• 2 Eggs
• ¼ teaspoon Salt
• 4 tablespoons shredded Taste cheese
• 1 Slice cheddar cheese
• 2 strips cooked Bacon
• 4 Jalapeno slices
• ¼ teaspoon scotch bonnet pepper, minced
• 2 tablespoons Guava jam
• 3 teaspoons of honey or agave

Method

  1. Cook your bacon (fry, air-fry, or bake in the oven) until crispy and set aside
  2. Place the sliced jalapenos, scotch bonnet pepper, guava jam, and honey in a saucepan over medium-low heat
  3. Stir until the guava jam has dissolved and set aside
  4. Cut four thin slices of the HTB Easter Bran bun, add 2 tablespoons of shredded tasty cheese between each (creating two sandwiches)
  5. Butter both sides of the sandwich and place each in a waffle maker and toast until just crispy to create two bun and cheese waffles
  6. Beat the two eggs until light, and add salt
  7. Add the remaining butter to a warm pan and cook the eggs.
  8. Allow it to set on one side, then flip to the other side and fold into a square or rectangular shape to fit the bun waffle
  9. To assemble, place down one bun waffle, followed by a little jalapeno jam on both sides, add cooked eggs, a slice of cheese, bacon, and top with the final bun waffle
  10. Serve immediately.
